Rewind

So I know I have been MIA, yet again.... It has been crazy learning to juggle God, family, and business. I am going to just post some photos to let you see what I have been up to :-)

So I have decided to take on organizing my house....This was the first step, organizing the pantry...it is not done, but a good start I think. I will post more pictures as time allows.



I have also been busy volunteering with Kids4Christ.  I am excited to see what God has instore for the new year.  I have really enjoyed teaching my Bible class. The children so easily grab ahold of my heart!

Blueberries in Georgia

So I haven't posted in a little while....I have been pretty busy.  The hubs and I have been going through all our things and donating items we no longer need or wear.  We are rearranging the back two bedrooms to paint and rip the carpet out...I know sounds like a fun project to some. Not to me.  I hate the whole process. But I love the finish.  I wouldn't hate it so bad if it wasn't wood paneling. YUCK.  It takes so many layers of primer and then still takes forever because you have lost momentum to put the color on.   I am not joking when I tell you it took a year to paint our living room.  Since we bought our home in 2007 we have only painted the living room, kitchen, and the boys bedroom and the nursery room (3rd bedroom).  I still lack the bathroom, our bedroom, the laundry room, back porch (here in the south we have these random rooms in the back of the house usually where the back door is that is just strange space-but great storage space for outdoor furniture or even easy space to build on later).  We are in no rush.  I plan to make the nursery into the boys class/art room.  I am pretty excited about it.  I am also excited about getting the last of the carpet out of the house :-)

Sooo your wondering where the blueberries come into play?  Well my precious MIL received some fresh picked blueberries from a dear friend at church.  And she didn't know what to do with them all...so I made my first blueberry pie! Soo yummy! It was very simple.  Not having time to make a crust last night and let it sit, I picked up the premade pie shells in the refrigerated section where you find the biscuts...I was a little leary not having used them before but it still turned out pretty good.

 I used about 4 cups of blueberries, a cup of sugar, 4 tbs of cornstarch and a tsp or more of cinnamon ( I eyeballed it). I served it with vanilla ice cream :-)

Wednesday I am going fabric shopping and plan to show a friend how to applique! I am pretty excited about it.  We are going to make her two precious girls shirts...then I am going to sew them skirts to match ;-)

I am also getting stuff ready for my etsy page!!! I will keep you posted as it comes along!

Apple Pie

So this is pretty random.  My oldest boy (not quite 3) woke up asking "2 oatmeals mom?" and so I made him some apple cinnamon oatmeal. Our favorite. And I have been craving apple pie ALL day.  Which got me to thinking I should tell you about my favorite recipe for apple pie.

It is not just any apple pie. It is Apple Caramel Pecan Pie...you must always remember I am from Georgia.
I don't have many pictures of them as they typically get cut into before I get around to taking a picture. Here is one I made this past Thanksgiving.
 
Mmm well I guess I will stop stalling and give you all the recipe...

First is the pie crust. I use the perfect homemade pie crust recipe, but you can use any you like or even one from the store. This calls for the pie shells to be unbaked.

1 cup sugar
5 tablespoons cornstarch
1 teaspoon ground cinnamon
3/4 cup chopped pecans
6 cups thinly sliced apples (I know there has to be a right apple/wrong apple for this. My sister says use a combo but I am horrible and usually just grab a bag of the best looking red apples...)
1/2-3/4 cup caramel (whatever recipe you want)

Preheat oven to 400. Stir sugar cornstarch and cinnamon together and toss with the apples in a mixing bowl. Pour the mixture into the first pie shell. Pour caramel and pecans on top of apple mixture. Place the second shell on top, cut shell to vent. Place in oven. Cook till golden brown crust. And let sit for about an hour after...if possible. Ours never sits that long. But it needs to if you are picky about how it cuts...
